POTATO SALAD WITH A SWEET & SAVOURY TWIST

Ingredients

1 cup sour cream
1 cup mayonnaise
2 tsp. Sunset Seasoned Salt
2 Tbsp. Polynesian Pineapple Rub & Seasoning
6-8 potatoes, peeled and cubed
6 hard boiled eggs, peeled and sliced
2 celery stalks, cut into ¼" slices
Fresh chives chopped
Salt & pepper

Instructions

Combine sour cream, mayonnaise and seasonings. Boil potatoes in salted water until tender, about 15-20 minutes. Drain, cool and transfer to a bowl; add eggs, celery, chives, salt and pepper. Start with spooning ½ of the dressing over the potato mixture and add more as needed; mix well.
Refrigerate for one hour or more before serving.

Left over dressing is great as a veggie dipper.
